A few weeks ago I stumbled upon a series of blogs that do "blog carnivals". One of the carnivals I discovered is by Rocks In My Dryer. She hosts an idea forum on Wednesdays, where she posts a topic and provides links to those who write on that topic. It is so cool to read peoples' ideas and see where the blogosphere takes me.
This week, Rocks In My Dryer says,
"It's 5:15 pm, the kids are hungry, you have a headache, hubby is almost home, and the pantry has three things in it. What is your BEST last-minute meal recipe? Share with everybody this week. We'll call it Works-For-Me Wednesday: The What-Do-I-Fix? Edition. Or we could just simplify and call it WFMWTWDIFE. Yeah. That's much simpler."
This is a common occurance in my home. I try to be prepared with a freezer full of meal kits from Dinner My Way or Mega Menu Mailer or something like that with one thawing in my refrigerator, ready to be cooked. However, there are days that when I'm not on my A-game, so alas, here are my family's favorite 3 item standbys.
1. bean and cheese burritos. Rosarita beans, cheese, & tortillas. (Noah says that I make the best bean and cheese burritos in the world... he is so lucky to have me!) :0)
2. Bow ties. Bow tie pasta, butter, & parmesean cheese. (another kid pleaser and sooo fancy!)
3. Stir Fry & rice. Frozen stir fry vegetables & Trader Joe's frozen brown rice.

Um, Heidi, let me just say that you are speaking to my heart on this one! Since I hate grocery shopping (and getting gas... weird... two necessities)... I am great at this! It tends to always be Mexican food on these nights. I always have tortillas, cheese, some form of meat... I'll be checking out this website fo' sure!

Heidi - This is so coincidental. I was going to e-mail you today to ask if you could help me (by help I mean show me how) make some of those make-ahead and freeze meals for my sick friend and her husband. We can talk about it tomorrow night, but talk about perfect timing for this post!

I made veggie fried rice tonight!!! That's one of our stand by's too. Also bean & cheese burritos. Thank goodness for Rosarita - she's saves my butt more times than I'd like to admit.
